Ingredients
- 4 / 200g veal cutlets
- plain flour
- 2 eggs lightly beaten
- 1 cup breadcrumbs
- 1/3 cup grated parmesan cheese
- 2 tablespoons chopped basil
- olive oil
- 4 baby bocconcini sliced
- 8 slices proscuitto ham
- SIMPLY STIRRED PEPPERED BALSAMIC DRESSING
Cooking Directions
- Flatten veal cutlets out slightly with meat mallet.
- Combine breadcrumbs, parmesan and basil.
- Coat each cutlet in flour ,dip into egg ,than into bread crumb mix.
- Heat olive oil in frypan add cutlets and cook till golden brown.
- Wrap each cutlet in prosciutto, then transfer cutlets to oven proof dish .
- Place sliced bocconcini ( or shredded mozzarella) on each cutlet and cook in oven on 180c for 8-10 mins until bocconcini has melted.
- Place cutlets on a bed of rocket and drizzle with SIMPLY STIRRED PEPPERED BALSAMIC DRESSING., serve with new potatoes and broccoli if desired.
