Serving Size: makes 4 pastries- double or triple the recipe if

Ingredients

  • Olive oil for greasing.
  • 1 sheet Pampas Butter Puff Pastry.
  • 1 ½ tbs olive oil
  • 2 medium tomatoes ( truss is best but not essential) cut into 5 mm thick slices.
  • 2 tsp SIMPLY STIRRED ROASTED EGGPLANT & SHALLOT SAMBAL
  • 200gm SOFT Philly cheese
  • Salt & pepper to taste
  • 1 spring onion sliced finely.

Cooking Directions

  1. Preheat oven to 230 degrees celcius.
  2. Brush a baking tray with olive oil to grease.
  3. Place pastry sheet/s on a bench for 2-3 minutes to thaw.
  4. Cut pastry into ¼’s and place on greased baking tray.
  5. Lightly brush the pastry squares with a little olive oil and bake in preheated oven for approx 8 minutes or until puffed and golden.
  6. Mix together the soft philly cheese and SIMPLY STIRRED ROASTED EGGPLANT & SHALLOT SAMBAL, until combined.
  7. Transfer pastry squares to a board and flatten lightly with an egg slice. To serve, top each pastry with tomatoes, eggplant mix and shallot.
  8. Drizzle pastries with any remaining olive oil, sea salt and cracked black pepper.
