Ingredients
- 750g raw prawns peeled deveined , tails intact
- 1/2 cup SIMPLY STIRRED SZECHUAN AND KAFFIR LIME PASTE
- 2 tbls peanut oil
- 2 eggs lightly beaten
- 1 red capsicum cut into strips
- 6 shallots cut into 3cm lengths
- 100g snow peas
- 50g snow pea sprouts
Cooking Directions
- Combine prawns and SIMPLY STIRRED SZECHUAN AND KAFFIR LIME PASTE cover and refrigerate for 1 hour.
- Heat wok ,add 2 tablespoons of peanut oil.
- Beat eggs together, dip 4 prawns into egg mixture and fry for 2-3 mins.
- Remove from wok and repeat with remaining prawns.
- Add capsicum, shallots and snow peas to wok and saute for 2 mins, return prawns to wok and toss to combine.
- Serve on a bed of snow pea sprouts if desired, or steamed rice.
