Ingredients

  •  750g raw prawns peeled deveined , tails intact
  • 1/2 cup SIMPLY STIRRED SZECHUAN AND KAFFIR LIME PASTE
  • 2 tbls peanut oil
  • 2 eggs lightly beaten
  • 1 red capsicum cut into strips
  • 6 shallots cut into 3cm lengths
  • 100g snow peas
  • 50g snow pea sprouts

Cooking Directions

  1. Combine prawns and SIMPLY STIRRED SZECHUAN AND KAFFIR LIME PASTE cover and refrigerate for 1 hour.
  2. Heat wok ,add 2 tablespoons of peanut oil.
  3. Beat eggs together, dip 4 prawns into egg mixture and fry for 2-3 mins.
  4. Remove from wok and repeat with remaining prawns.
  5. Add capsicum, shallots and snow peas to wok and saute for 2 mins, return prawns to wok and toss to combine.
  6. Serve on a bed of snow pea sprouts if desired, or steamed rice.
