Ingredients
- 2 tbls SIMPLY STIRRED SZECHUAN PEPPER & KAFFIR LIME PASTE
- 2 tbls soy sauce
- 350gm pork steaks- roughly chopped.
- 350gm green beans
- 2 tsp sesame oil.
- 200gm mushrooms- button.
- 1 tbls castor sugar.
- 200gm dried egg noodles.
- 100gm cashews- unsalted and roasted preferably.
- 2 green onions ( eschalots/spring onions) roughly chopped.
Cooking Directions
- Combine SS SZECHUAN PEPPER AND KAFFIR LIME PASTE and soy sauce in a bowl and stir till combined.
- Quarter mushrooms, top and tail beans.
- Add pork and sugar to processor and pulse till finely chopped, but not a paste.
- Heat wok to high heat. Add 2 tbls peanut oil and 1 tsp sesame oil to wok.
- Add pork mixture and stir fry for 3 minutes or until browned. Remove from heat.
- Add remaining 1 tbls peanut oil and 1 tsp sesame oil to wok, when hot add mushrooms and beans, stir fry for 4 minutes or until beans are almost tender.
- Cook noodles in a pan of boiling salted water for 4-5 minutes or until tender- Drain.
- Return pork mix to wok, add onions, cashews and soy/paste mix. Toss for another 2 minutes and serve immediately with noodles.
