Szechuan Chicken

Ingredients

  • 2 tbls SIMPLY STIRRED SZECHUAN PEPPER & KAFFIR LIME PASTE
  • 2 tbls soy sauce
  • 2 tbls chinese cooking wine
  • 500gm chicken breast fillets cut into strips
  • 2 tbls peanut oil
  • 1 carrot- sliced diagonally
  • 1 red capsicum- deseeded and thinly sliced
  • 2 green onions ( eschalots/spring onions) sliced diagonally

Cooking Directions

  1. Combine SS SZECHUAN PEPPER AND KAFFIR LIME PASTE ,soy sauce, and chinese cooking wine in a bowl and stir till combined.
  2. Add chicken and marinade for 10 minutes min- 30 mins max.
  3. Heat 1/2 the peanut oil in a wok, drain chicken from marinade and reserve the marinade.
  4. Cook chicken in batches for 3 minutes or until just browned.
  5. Remove from heat and keep warm.
  6. Heat remaining oil, add carrot and capsicum and cook for 2-3 minutes. Return chicken and any juices and reserved marinade. Cook for another 3 minutes.
  7. Serve immediately- on rice or steamed greens.
