Ingredients
- 2 tbls SIMPLY STIRRED SZECHUAN PEPPER & KAFFIR LIME PASTE
- 2 tbls soy sauce
- 2 tbls chinese cooking wine
- 500gm chicken breast fillets cut into strips
- 2 tbls peanut oil
- 1 carrot- sliced diagonally
- 1 red capsicum- deseeded and thinly sliced
- 2 green onions ( eschalots/spring onions) sliced diagonally
Cooking Directions
- Combine SS SZECHUAN PEPPER AND KAFFIR LIME PASTE ,soy sauce, and chinese cooking wine in a bowl and stir till combined.
- Add chicken and marinade for 10 minutes min- 30 mins max.
- Heat 1/2 the peanut oil in a wok, drain chicken from marinade and reserve the marinade.
- Cook chicken in batches for 3 minutes or until just browned.
- Remove from heat and keep warm.
- Heat remaining oil, add carrot and capsicum and cook for 2-3 minutes. Return chicken and any juices and reserved marinade. Cook for another 3 minutes.
- Serve immediately- on rice or steamed greens.
