Ingredients

  • 1 tbls brown sugar
  • 750gms green king prawns- peeled with tails intact OR 500gm chicken breast fillets cut into strips
  • 2 Mangoes- peeled and sliced
  • 1 tbls canola or veg oil.
  • 1 lime- juiced
  • 2 lebanese cucumbers- sliced on an angle
  • 150gm baby spinach leaves
  • Lime wedges, fresh coriander leaves and steamed rice to serve.
  • ½ cup SIMPLY STIRRED MANGO, CHILLI & CORIANDER DRESSING

Cooking Directions

  1. Combine 1 tbls brown sugar, 1 tbls oil and 2 tbls sweet chilli sauce, lime juice and the prawns- Toss gently, cover and put in fridge to marinate for 30 mins.
  2. Heat frypan on medium, cook the prawns for 2-3 minutes and remove from pan.
  3. Combine mangoes, cucumber ,spinach leaves and prawns in a bowl. Toss gently.
  4. Serve in to either 4 small bowls or a large serving dish, and drizzle ½ cup of SIMPLY STIRRED MANGO, CHILLI & CORIANDER DRESSING over salad and serve.
