Ingredients
- 2 mangoes- peeled, stone removed and diced into 1 cm cubes.
- 1/2 small red onion- diced into 1 cm cubes
- 1/2 red capsicum- deseeded and diced into 1 cm cubes
- 8 small pork medallions.
- ½ cup SIMPLY STIRRED MANGO, CHILLI & CORIANDER DRESSING
Cooking Directions
- Combine mangoes, capsicum, onion and SIMPLY STIRRED MANGO, CHILLI & CORIANDER DRESSING in a bowl- refrigerate until required.
- Heat frypan on medium-high,spray pan with cooking oil and sprinkle with salt & pepper.Cook for 3 minutes on each side.
- To serve, divide pork amongst plates and top with mango salsa.
- Serve immediately- perhaps with some steamed rice or a simple green salad.
