Pork Meatballs with Peanuts

Serving Size: makes 16-20 depending on size.

Ingredients

  • 2 tbs SIMPLY STIRRED PEANUT & LIME PASTE
  • 1 tbs soy sauce
  • 500gm pork mince
  • 1 tsp ginger- grated
  • 1 tsp garlic- finely chopped
  • 1 large brown onion- chopped finely
  • 1 egg
  • ¾ cup fresh breadcrumbs
  • peanut oil for cooking

Cooking Directions

  1. Place all ingredients in a large bowl and mix thoroughly.
  2. Roll into small balls and place in fridge for ½ hour.
  3. Heat oil in saucepan med- high.- ALTERNATE METHOD- place on baking tray with baking paper and place in 180 degree oven for 10-15 minutes- depending on size.
  4. Roll meatballs in flour and then cook in batches in oil- approx 4 minutes- or until cooked.
  5. Drain on paper towel
  6. Serve with toothpicks and a satay or sweet chilli sauce.
  7. These meatballs can be made ahead of time and left in fridge- just heat in microwave on MED heat for 30-40 seconds- depending on how many are placed in microwave at a time.
