Ingredients
- 4 tbls olive oil
- 1 punnet of cherry or grape tomatoes.
- 1 red capsicum - optional
- 250g pumpkin
- 250g sweet potato
- 1 small eggplant
- 1 large zucchini
- 4 field mushrooms
- salt
- SIMPLY STIRRED PEPPERED BALSAMIC DRESSING
Cooking Directions
- Preheat Oven to 180 degrees celcius.
- Remove seeds from capsicum and cut into 4 pieces.
- Remove stalks from mushrooms and chop roughly all remaining vegetables and place in a bowl.
- Drizzle oil over vegetables and toss to coat.
- Place all vegetables in a roasting tray, sprinkle with a little salt and and bake at 180 degrees for approx 25 minutes. Stir once or twice throughout cooking time.
- Pierce a piece of pumpkin to test it is cooked through.
- Remove from oven and drizzle SIMPLY STIRRED CARAMELIZED BALSAMIC WITH PEPPER over the vegetables and serve.
