Ingredients
- 500gm desiree potatoes cut into 3cm cubes
- 4 pork loin cutlets, or steaks
- 3 Granny Smith apples peeled, cored and cut into wedges
- 1 brown onion cut into wedges
- 2 tbls olive oil
- ½ cup dry roasted pecans- chopped
- ¼ cup freshly squeezed orange juice( approx I large orange).
- ½ cup SIMPLY STIRRED ASIAN DUKKAH
Cooking Directions
- Preheat oven to 220 degrees celcius.
- Place potatoes and 1 tbls water in a microwave container- cover and cook on HIGH for 5 minutes. Drain and return potatoes to a bowl.
- Line a baking tray with baking paper.
- Place apples, onion and 1 tbls oil in the bowl with the potatoes, toss to combine.
- Spread a single layer on the baking tray and roast for 20 mins. Remove from oven.
- Sprinkle with pecans and the orange juice and set aside.
- Heat remaining oil in a large non-stick frypan to medium heat. Using fingertips, press SIMPLY STIRRED ASIAN DUKKAH onto both sides of the pork cutlet.
- Add to pan and cook for approx 4 mins on each side or until cooked through.
- Serve with the roasted apple salad..
