Chicken, Mango & Avocado Salad.

Ingredients

  • 400gms cooked shredded chicken ( BBQ chicken from store is fine, BUT remove skin)
  • 2 Mangoes- peeled and diced.
  • 2 Avocadoes- peeled and diced.
  • 1 butter lettuce
  • 1 lime- zested-plus lime wedges to serve.
  • ½ cup SIMPLY STIRRED MANGO, CHILLI & CORIANDER DRESSING

Cooking Directions

  1. Place avocado, mango and zested lime in bowl with SIMPLY STIRRED MANGO, CHILLI & CORIANDER DRESSING.
  2. Wash and spin lettuce leaves and divide between plates.
  3. Add chicken to avocado & mango mix, mix gently with clean hands and divide onto plates.
  4. Add lime wedges and serve.
