Beef & Blackbean with Vegetables

Serving Size: 4

Ingredients

  • 500gm ‘Heart Smart’ beef strips
  • 1/4 cup SIMPLY STIRRED BLACKBEAN AND PEPPER PASTE
  • 1 red capsicum- deseeded and sliced
  • 1 bunch broccolini
  • 150gm green beans- topped and taile
  • 4 tbs olive oil

Cooking Directions

  1. Heat wok to high heat, add 2 tsp oil. Cook beef in 2 batches until just cooked through. Transfer to a plate.
  2. Heat remaining oil, add capsicum, broccolini and beans- stir fry for 2-3 minutes.
  3. Add SIMPLY STIRRED BLACKBEAN AND PEPPER PASTE and 1 tbls water, stir, cover and cook for 1 minute.
  4. Return beef to wok and toss to coat.
  5. Serve on steamed rice.
