Ingredients
- 8 large flat mushrooms- about 10-12 cm diameter- peeled and stem trimmed
- 2 tbls SIMPLY STIRRED CARAMELIZED BALSAMIC W PEPPER
- 1 tbls olive oil
- 10 sprigs fresh thyme
- 150gm fresh ricotta
Cooking Directions
- Preheat oven to 200 degrees celcius.
- Place mushrooms- cap side up in a large roasting pan.
- Combine oil and SS CARAMELIZED BALSAMIC W PEPPER in a small jug, drizzle over the mushrooms and top with the thyme.
- Remove from oven and sprinkle with ricotta and drizzle pan juices and a little more dressing over the mushrooms.
- Either serve with a steak as a side dish or perhaps with some lemon couscous as a main dish.
