Balsamic & Thyme Mushrooms

Ingredients

  • 8 large flat mushrooms- about 10-12 cm diameter- peeled and stem trimmed
  • 2 tbls SIMPLY STIRRED CARAMELIZED BALSAMIC W PEPPER
  • 1 tbls olive oil
  • 10 sprigs fresh thyme
  • 150gm fresh ricotta

Cooking Directions

  1. Preheat oven to 200 degrees celcius.
  2. Place mushrooms- cap side up in a large roasting pan.
  3. Combine oil and SS CARAMELIZED BALSAMIC W PEPPER in a small jug, drizzle over the mushrooms and top with the thyme.
  4. Remove from oven and sprinkle with ricotta and drizzle pan juices and a little more dressing over the mushrooms.
  5. Either serve with a steak as a side dish or perhaps with some lemon couscous as a main dish.
